作者还举了用分子烹饪法发展烹饪事业,在Chicago 的Moto用molecular gastronomy 突破传统烹饪,把taste menu 变成Italian panini sandwich ,或者由chocolate, frozen mango,cheesecake 制作而成实际看起来Mexico nachos(墨西哥烤干酪辣味玉米片)。
