Hallowween is coming. Let's made a scary nice food.

INGREDIENTS

For potatoes

4 large russet potatoes, peeled and chopped

1/2 cup whole milk

2 ounces cream cheese

2 tablespoons unsalted butter

Kosher salt and black pepper

For stew

2 tablespoons olive oil

1 1/2 pounds beef stew meat

Kosher salt and black pepper

3 ½ cups cubed baking pumpkin (1/2-inch pieces)

1 large yellow onion, chopped

2 cloves garlic, minced

1/4 cup tomato paste

1 tablespoon butter

1/4 cup all-purpose flour

1 1/2 cups low-sodium beef broth

½ cup whole milk

1 cup frozen peas, plus extra for garnish

PREPARATION Prep Time: 45min | Cook Time: 35min

For the potatoes

Place potatoes in a large pot and cover them with water. Bring to a boil and cook until potatoes are fork tender.

Drain and place them in the bowl of a stand mixer (or in a regular bowl and use a handheld mixer or mash by hand). Add the milk, cream cheese and butter and beat until smooth.

Season with salt and pepper to taste and set aside

For the stew

Preheat the oven to 200C

Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the beef, season with salt and pepper, and brown on all sides.

Add the pumpkin, onions and garlic and cook until softened, about 10 minutes.

Add the tomato paste and mix. Cook for an additional 1 to 2 minutes.

Transfer the mixture to a large bowl and return the pot to the stove. Lower the heat to medium-low and add the butter. Once the butter is melted, add the flour to the pot and whisk for about 1 minute.

Add the beef broth and milk and whisk until thickened over a simmer, about 5 minutes. Add the beef mixture back into the pot with the peas and stir to combine.

Spoon the mixture into a large cast-iron skillet or baking dish.

Bake for 20 to 25 minutes, until the pumpkin is tender and the sauce is bubbling. Remove from the oven and let sit for 10 minutes to cool.

Place the mashed potatoes in a pastry bag or a plastic bag with the end snipped off. Pipe potatoes in the shape of a ghost on top of the stew.

土豆做法:

把土豆放在一个大罐子里,用水覆盖。煮开,煮到土豆都是叉子。

把它们放在一个立式搅拌机的碗里(或在一个普通的碗里,用一个手持搅拌机或用手捣成糊状)。加入牛奶、奶油、奶酪和黄油,搅拌均匀。

用盐和胡椒调味,放在一边。

炖肉的做法

把烤箱预热到200摄氏度。

将橄榄油放在一个大罐或烤箱中,在中高温加热。加入牛肉,加入盐和胡椒调味,并在所有的边上。

加入南瓜,洋葱和大蒜,煮至软,约10分钟。

加入番茄酱和搅拌。

把混合物转移到一个大碗里,把锅放回炉子上。把热量低到中低档,加入黄油。一旦黄油融化,将面粉加入锅中,搅拌约1分钟。

加入牛肉清汤和牛奶,搅拌至浓稠,约5分钟左右。将牛肉混合物放入锅中,拌入豌豆,搅拌均匀。

将混合物舀入一个大的铁锅或烤盘中。

烤20到25分钟,直到南瓜变软,酱汁起泡。从烤箱中取出,10分钟冷却。

把土豆泥放在一个糕点袋或一个塑料袋里,剪掉尾部,在杯顶层挤压“魔鬼”造型,然后用豆作眼睛,完成!
