I make this bread very often for parties, picnics, game night or for quick snacks. My family loves it and they recognize its aroma the moment they walk in through the front door whenever I make it. I suggest you make a double batch, because this bread will disappear before you know it.

Makes 1 large or 2 small loaves

1 large chouriço or linguica (sliced to ¼ inch)

2 large onions (sliced thin)

1 large red pepper (sliced thin)

2 pounds pizza dough

Preparation

Put your pizza dough in a large bowl and let it rise for about 30 minutes to 1 hour until doubled.

Preheat oven to 400 degrees F.

In a large skillet saute the onion and peppers in the olive oil until browned. Add the chouriço sausages and saute for about 1 minute.

Meanwhile roll out the pizza dough to desired length. You can make 1 large or 2 medium size loaves. Spread the chouriço and onions mixture evenly over the dough. Add cheese if desired at this point.

Carefully roll the dough into a long bread shape tucking in the edges of the bread underneath. Cook for about 20 minutes or until golden brown depending on your oven. Tap the bread gently and listen for hollow sound. The bread will be ready at this point. Let cool before slicing.
