1: sliced red pepper and red onion

2: saute 1 , tossing, pepper, Sault, sugar, red wine vinegar, virgin olive oil, basil

3: a few cuts through the rind, garlic, thyme, butter, flat, tilt the pan and baste, moist, let pork rest almost as long as they are cooked in the pan
