Beijing roast duck is famous for its crisp skin and tender meat. One of the the features of Beijing roast duck is the way it is served. The rouast ted duck is brought to the diners whole, and a cook slice it in front of them. The crisp skin and juicy meat are eaten with srping onion, cucumber and sweet bean sauce. All these are rolled in pancakes.
