1.Boiled salted duck
Historic origin:The other name is osmanthus fragrans duck,it’s belongs to Jinling cuisine (one type of South Chinese cuisine,most popular in Jiangsu province).Nanjing has 8th famous dishes we called ‘the eight unique Qinhuan’,boiled salted duck is one of these dishes,almost everybody know it’s the specialty for Nanjing.
It’s has more than 2,500years history and be famous for Royal recipe(Ming Dynasty,it’s the old capital of 6 Dynastys.Ming is one of these).
2.Flavor
A little salty and tender,fat but not greasy.the characteristic is fragrance,crispy and tender.
it’s very chewy when you eating.
The skin white and taste a little tender and delicious,healthier than other cooking manner.
ingredients are very fresh and the duck should be alive when the chef kill it.(I bought this from a traditional and century-old shop,it can be guaranteed for the ingredients).
I am not sure what’s the stuffing inside as I never tasted this pastry. I think maybe the stuffing is chestnuts.
The wrap was made by green beans with dough and sugar(I guess:),also I am not sure)
The wrap taste crispy and the stuffing was Durian .
